Judith's "Chuck it all in" Chicken:
Ingredients (Serves 4)
1.4Kg Park Farm Whole Chicken
Place chicken in an ovenproof pot,
Fry onion and garlic in butter,
Add bacon and cook for 3 minutues then, stir in mushrooms lemon juice, rind and tarragon and cook for a further 1 minute.
Pour over wine and season.
Spoon mixture around chicken and add bay leaves, then cover and coof for 1 hour at Gas 5/170fan
Remove lid and cook for a further 20 minutes
Serve with vegetables of your choice
